Ingredients
- Vinaigrette:
- 4-6 bonless, skinless chicken breasts
- 1 C flour
- 1 t kosher salt
- 1/2 t freshly ground black pepper
- 2 large eggs
- 1 T water
- 1 1/4 seasoned bread crumbs
- 1/2 C greshly grated Parmesan
- Olive oil
- Salad greens with Lemon vinaigrette
- 1.4 C freshly squeezed lemon juice (2 lemons)
- 1/2 C olive oil
- 1.2 t kosher salt
- 1/4 t pepper.
- Whisk together in small bowl.

Preparation
Step 1
Pound chicken breats.
Combine flour, salt & pepper on dinner plate. On second plate, beat eggs with 1T water. On third plate, combine bread crumbs & Parmesan. Coat chicken on both sides with flour mixture, then dip into egg mixture & dredge in bread crumb mixture, pressing lightly.
Heat 1 T butter & 1 T olive oil in large suate pan & cook chicken on med-lo heat 2-3 min. til cooked thru. toss salad greens with lemon vinaigrette. Mound chicken on salad and serve with extra Parmesan
