Ingredients

  • 2 tsp. chili powder
  • 1 tsp. each: cumin, dehydrated minced garlic or use 2 fresh garlic cloves, minced
  • 1/2 tsp. each: oregano, crushed red pepper
  • 1 lb. lean ground beef
  • 1/2 cup chopped onion
  • 1 can (680ml) tomato sauce
  • 1 can black beans
  • 3/4 cup frozen corn
  • 1 can (127ml) chopped green chilies
  • 8 flour tortillas or use fresh lasagna sheets
  • 2 cups shredded Cheddar cheese

Step 1

In large skillet brown beef and onion over medium high heat; drain. Stir in tomato sauce, beans, corn and chilies. Stir in all spices except red pepper. Bring to a boil. Reduce heat to low; simmer 5 mins. Add red pepper to taste, if desired. Spread 2/3 cup beef mixture on bottom of lightly greased 13 X 9 baking dish. Top with tortillas or lasagna sheets, overlapping as needed. Layer with 1/2 of remaining tortillas or lasagna sheets and half of cheese. Repeat with remaining torillas or lasagna sheets, beef mixture and cheese. Bake in preheated 350 degree F oven 15-20 mins. or until heated through. Let stand 5 mins. before serving.
