Ingredients
- 7 cups water
- 1/2 tsp, salt
- 1 2/3 cup polenta (or yellow cornmeal).
- 1/2 cup chopped Fresh basil
- 1/2 cup toasted and chopped pine nuts
- 1/2 cup grated Parmesan cheese

Preparation
Step 1
Bring 7 cups water to a boil. Add 1/2 tsp, salt and slowly add 1 2/3 cup polenta (or yellow cornmeal). stirring constantly. Reduce heat continue cooking and stirring. For 35 min. or until thickened. Remove From heat and stir in 1/2 cup chopped. , Fresh basil. 1/2 cup toasted and chopped pine nuts and 1/2 cup grated Parmesan cheese, Spread out on an oiled 11" x 9" baking pan, Cover with aluminum Foil and bake in a 350° oven For 15 min,. until firmly set Let cool. Cut into diamond shapes. brush with olive all and grill over hot coals For 2-3 min. on each-side.
