Ingredients
- 4 C Low-sodium Chicken Broth
- 1/4 C EVOO
- 1 Lbs Boneless, skinless chicken breast cut into 1/2" chunks
- 2-3 Garlic Cloves
- 1 Large Onion
- 1 Red Bell Pepper
- 2 Tomatoes
- 3-4 Jalapeno Chile Peppers
- Salt and black pepper
- 2 Avocados
- 1 C Shredded Monterey Jack Cheese
- 1/2 C Chopped Cilantro
- 4 Tbs Sour Cream

Step 1
Bring broth to a boil in a large saucepan over medium heat.
Meanwhile, heat the oil in a large skillet over medium heat. Add chicken and garlic and cook until chicken is nicely browned. 5-6 Min
Add first 9 ingredients to the broth and return to a boil. Reduce to a simmer, cover, and cook for 30 min.
Top with avocado, cheese, cilantro, and a spoonful of sour cream.
