Chicken skewers with Lemon-Mint Vinaigrette

Ingredients
- 1 T hot paprika
- 1 1/2 t minced garlic
- 1/2 t dried oregano
- 1/2 t ground cumin
- 1/2 C + 1/3 C olive oil
- salt & pepper
- 2 T chopped parsley
- 2 T chopped mint
- 2 t lemon zest
- 2 T lemon juice
- 1/8 t cayenne pepper
- 2 lbs. skinless, boneless chicken, cut in 1 1/2" pieces
- 1 large red onion, sliced crosswise 1/2" thick
- 8 C loosely packed arugula or spinach
- Lemon wedges for serving

Preparation
Step 1
1. Light grill. In small bowl mix paprika with 1 t. garlic, oregano & cumin. Whisk in 1/3C olive & season with the Paprika oil with salt & pepper.
2. In another small bowl, combine the parsley, mint, lemon zest, lemon juice, cayenne & remaining garlic. Whisk in 1/2 C olive oil. Season with salt & pepper.
3. Thread chicken pieces onto 6 skewers. Brush chicken & onion slices all over with paprika oil & arrange on grill. Cook onions for 4 min., turning once, til they are slightly softened. Grill chicken for 12 min., turning occasionally til cooked thru.
Arrange arugula on platter; spread onions & chicken on top, drizzle with vinaigrette & serve with lemon wedges.
