Ingredients

  • ¾ c. whole wheat flour
  • ¾ c. unbleached all-purpose flour
  • 1-1/4 c. oats
  • ¼ c. sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/3 c. oil
  • 1/3 c. skim or lowfat milk
  • 1 egg, beaten
  • ½ c. raisins

Preparation

Step 1

Preheat oven to 425 degrees. In a large bowl, stir together the flours, oats, sugar, baking powder, cinnamon, and raisins until well combined. In a small bowl, beat together the oil, milk, and egg. Stir the egg mixture into the dry ingredients until they are thoroughly moistened (batter will be stiff and resemble cookie dough). Spread the dough evenly in a lightly oiled 8-inch round cake pan or pat into an 8-inch circle on an oiled cookie sheet. Bake for approximately 15 minutes. Cool slightly and cut into 8 wedges before serving.
