FRUIT CAKE

Ingredients

• Cream together until fluffy*
• 3 cups soft butter
• 3 cups white sugar
• 3 cups brown sugar
• Add:*
• 12 eggs
• Sift together*
• 9 cups flour
• 3 tsp. baking powder
• 3 tsp. salt
• Stir in alternating with*
• 3 cups crushed pineapple with liquid
• 6 tsp. vanilla
• 6 tsp. almond flavoring
• Add nuts and fruit*
• 2 lbs. chopped dates
• 2 lbs. golden raisins
• 6 lbs. mixed candied fruit (can use dried fruit)
• 1/2 lb. lemon peel
• 1 qt. pecans
• 1 1/2 qts. Walnuts

Step 1

This recipe makes 6 cakes Total bake time = ( Bake for 2 hours) at 300 deg. For 15 minutes then 250deg the rest of the time
