Ingredients

  • 4 c. flour
  • 2 tbsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 4-serving size pkg. instant lemon pudding mix
  • 4 eggs
  • 1 1/4 c. sugar
  • 1 c. canola oil
  • 1 1/2 c. milk
  • 1 lemon, juice and zest
  • 1 tsp. lemon extract
  • 2 c. unpeeled zucchini, grated
  • 1/2 c. poppy seeds

Step 1

In large bowl, combine flour, baking powder, baking soda, salt and pudding mix. In separate bowl, beat eggs, sugar, oil, milk, lemon juice, zest and extract.
Make well in center of flour mixture. Pour egg mixture into well, add zucchini and poppy seeds.
Stir until just moist. Pour into 3 greased 4 1/2" x 12 1/2 " loaf pans. Bake at 325 degrees for approximately 65 minutes.
