- 6 large, firm yellow plantations
- Peanut oil for deep frying
- 2 tablespoons ground ginger
- 1 tablespoon cayenne pepper or more to taste
- Salt to taste

Step 1
Peel the plantains and cut them into thin rounds using a sharp paring knife or a mandolin. Heat the oil for deep frying to 375 degrees in a deep fryer or heavy Dutch oven. When the oil is hot, fry the plantain slices a few at a time.
Drain the crisps on absorbent paper and continue until they all are fried. Mix the ginger, pepper and salt in a brown paper bag. Add the plantation crisps and shake to coat all crisps.
Serve warm if possible--with drinks.
