Cottage Cheese Pancakes

I have to admit I would of never tried these if it wasn't for the fact that I was at my neighbor's as she was making them. YUMMMM so very good.
We love them with the Pumpkin Butter from Trader Joes.
They are good even reheated in the microwave. Plus even like them cold.
These pancakes are a good source of protein, compared to high priced protein bars.
Good for take along lunches.
For dinner we serve with low fat sausages

Ingredients
- 2 Cups Cottage Cheese (We like Knudsen's Lowfat)
- 4 Eggs
- 1/2 cup flour (I use 1/4 cup whole wheat and 1/4 Cup white)
- Makes 14- 4 " pancakes
- 1.4 WW Points per pancake, I figure with Pumpkin Butter 2 Points per pancake

Preparation
Step 1
Mix Cottage cheese, eggs and flour in small bowl. Mix about 1 hour ahead and let set in refrigertor. Spoon batter on griddle sprayed with Pam, fry until bubbles on surface of pancake remain open.
