Ingredients
- 2 cups whole wheat flour
- 1 tbsp ground ginger
- 1 tsp baking soda
- 1 stick butter (1/4 cup)
- 1/4 cup molasses
- 2/3 cup light brown sugar
- 2 tbsp finely grated fresh ginger
- 1 large egg
- 1 cup dried apricots
- ,finely chopped
- 1/2 cup finely chopped cystallized ginger
- 1 cup turbinado sugar

Preparation
Step 1
1. In large bowl, stir together flour, ground ginger and baking soda.
2. In a small over medium low heat, melt butter. Remove from heat and stir in molasses, brown suger and fresh ginger. Let cool.
3. Add egg to cooled molasses mixture and stir to combine. Slowly stir in reserved dry ingredients, then stir in apricots and cystallized ginger. Cover with plastic wrap and chill for 1 hour.
4. Preheat oven to 350F. Meanwhile, place turbinado sugar in a shallow bowl. Shape dough into 1/2" balls, then roll in turbinado sugar. Place cookies on two parchment - lined baking sheets, leaving 2" between cookies. Bake 8 - 10 mins. Transfer iron rack to cool
