Ingredients

  • 1 TBSP olive oil
  • 1 TBSP butter
  • 1/2 large onion, chopped
  • 1 tsp red pepper flakes
  • 1 clove garlic, finely chopped
  • 1 pound collard greens, chopped
  • 3 cups of vegetable stock
  • 2 tomatoes, seeded & chopped or 1 can of diced
  • salt & pepper

Preparation

Step 1

In a large pot over medium heat, heat oil & butter. Saute the onions until slightly softened, about 2 mins. then add the red pepper flakes & garlic, cook another minute. Add collard greens & cook another minute. Add vegetable stock, cover & bring to boil then simmer. Cook until greens are tender, about 40 minutes. Add tomatoes and season with salt & pepper.
