Got this recipe from a Gourmet magazine - which has now not published.... fancy and fatty and time consuming.. but very pretty and tasty!!

Ingredients

  • BOTTOM:
  • 2 cups graham crumbs
  • 1/2 cup cocoa
  • 1/2 cup icing sugar
  • 1/2 cup melted butter
  • 1 tsp vanilla
  • OREO FILLING:
  • 2 pounds cream cheese
  • 1 1/4 cups white sugar
  • 2 tbsp flour
  • large 4 extra large eggs
  • 2 egg yolks
  • 1/2 cup whipping cream
  • 1 tsp vanilla
  • 1 1/2 cups coarsley chopped OREO cookies
  • SOUR CREAM GLAZE:
  • 1/4 cup white sugar
  • 2 cups sour cream
  • 1 tsp vanilla
  • SWISS CHOCOLATE GLAZE:
  • 1 cup whipping cream
  • 10 chocolate squares
  • 1 tsp vanilla
  • Oreo Cookies

Preparation

Step 1

BOTTOM:

Blend all ingredients. Press up sides and bottom of 10" springform pan. Refrigerate.

OREO FILLING:

Blend cream cheese, sugar and vanilla till smooth. Add eggs and yolks - one at a time. Pour 1/2 into crust. Add cookies crumbled. Pour on remaining batter and smooth with spatula. Bake at 425 for 15 minutes. Reduce heat to 225 and bake for 50 minutes.

SOUR CREAM GLAZE:

Combine sour cream, vanilla and sugar. After 50 minutes of baking - remove cake from oven. Spread sour cream glaze over top. Bake at 350 for 10 minutes. Immediately remove from oven. Put wax paper on top and refrigerate.

SWISS FUDGE GLAZE:

Scald whipping cream. Add chocolate and stir for 1 minute. Add vanilla. Refrigerate for 15 minutes.

Once cooled - set cake on platter and remove spring form. Pour glaze over top of cake and using a pastry brush - glaze tops and sides smoothly.

To decorate, cut oreo cookies in 1/2. Put cut edge down along edge of top of cake and set into place when chocolate is still soft.
