Ingredients

  • 4 pound chuck roast, trimmed
  • to taste Kosher salt and freshly ground 5 pepper blend
  • 1 T canola oil
  • 1 bottle Irish stout braising base (695 grams or 24.5 oz)
  • Mashed Potatoes
  • 5 pounds Yukon Gold potatoes, peeled and cut into 2" pieces
  • 2 t salt
  • 8 T unsalted butter, cut into small pieces
  • 1 3/4 cups half and half, heated
  • fresh ground white pepper to taste
  • 6 hours plus 10 minutes

Preparation

Step 1

1) To prepare the pot roast, season the roast on all sides with salt and 5 pepper blend
2) In the stovetop-safe insert of a slow cooker or in a large saute pan over medium-high heat,
warm the oil until almost smoking. Add the roast and brown on all sides, 7-8 minutes, total.
