Ingredients
- 4 pound chuck roast, trimmed
- to taste Kosher salt and freshly ground 5 pepper blend
- 1 T canola oil
- 1 bottle Irish stout braising base (695 grams or 24.5 oz)
- Mashed Potatoes
- 5 pounds Yukon Gold potatoes, peeled and cut into 2" pieces
- 2 t salt
- 8 T unsalted butter, cut into small pieces
- 1 3/4 cups half and half, heated
- fresh ground white pepper to taste
- 6 hours plus 10 minutes

Preparation
Step 1
1) To prepare the pot roast, season the roast on all sides with salt and 5 pepper blend
2) In the stovetop-safe insert of a slow cooker or in a large saute pan over medium-high heat,
warm the oil until almost smoking. Add the roast and brown on all sides, 7-8 minutes, total.
