Ingredients

  • 2 slices bacon, chopped 2
  • 1 small green pepper, chopped 1
  • 1 small onion, chopped
  • 1 can cream style corn (14 oz / 398 ml)
  • 1 C corn kernels
  • 2 eggs, beaten
  • 1/2 C fresh or frozen cranberries, coarsely chopped
  • 1/2 C buttermilk
  • 1/4 tsp salt
  • 1/8 tsp pepper

Preparation

Step 1

In a small skillet; cook bacon, green pepper and onion over medium heat until bacon is cooked through and vegetables are tender.

In a medium bowl; mix bacon mixture with cream style corn, kernel corn, eggs, cranberries, milk, salt, and pepper. Pour into lightly greased casserole. Bake in preheated 350 F (180 C) oven for 50 to 60 minutes or until centre is set.
