- • 2 carrots, peeled & chopped coarsely
- • 1 onion, chopped coarsely
- • Chicken broth
- • Lemon juice from 2 lemons
- • Roast chicken, cubed
- • Pasta
- • Bay Leaf
- • Parmesan rind, softened in broth
- • Parsley

Preparation
Step 1
Roast chicken and slice into cubes. Heat oil in heavy saucepan. Saute onion and carrots. Add chicken broth, pasta, parmesan rind, and bay leaf. When pasta is cooked, add parsley and remove from the stove.
