Ingredients

  • 1/3 cup butter or margarine
  • 1/2 cup minced onion
  • 1/3 flour
  • 3 cups milk
  • 2-1/2 cups (10 oz) grated cheddar cheese
  • 1 Tablespoon salt
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon pepper
  • 10 cups thinly sliced,peeled potatoes, (4 pounds)
  • 1/4 teaspoon paprika

Preparation

Step 1

In a medium saucepan melt butter. Add onion; saute' until soft, 2-3 minutes. Gradually add milk, stirring constantly.
Cook over medium heat until slightly thickened and begins to boil. Add 1 cup cheese, salt, mustard and pepper. remove from heat; stir until cheese is melted. Arrange half the potato slices in 13x9 inch greased baking dish. Pour half the sauce over potatoes in the dish. Arrange remaining potatoes in pan and pour on remaining sauce. Cover with foil and bake for 1 hour or until potatoes are fork tender. Uncover, sprinkle casserole with remaining 1-1/2 cups cheese and paprika. Continue baking until cheese is melted, about 5 minutes.
