  • 2 c. whole milk
  • 3/4 c. shelled fresh green almonds or toasted slivered almonds
  • 3 T almond oil
  • Salt and freshly ground white pepper
  • 4 sprigs chervil, for garnish
  • 4 purple basil leaves, for garnish
  • 4 green basil leaves, for garnish

Step 1

In a small saucepan, bring the milk, almonds, and oil to a boil. Strain through a fine-mesh sieve over a bowl, and season with salt and pepper. Pour the milk back into the saucepan, and return it to a boil. Remove the pan from the heat, and using a hand held immersion blender, mix the milk until it's foamy. To serve, divide the vegetables among four warm shallow soup bowls, and spoon the almond foam around. Garnish with the herbs and serve immediately.
