Ingredients

  • Green Chile Casserole:
  • cooking spray
  • 12 corn tortillas
  • 4 ounce can chiles, diced
  • 2 Cups shredded cheese
  • Red Bell Pepper, diced
  • 6 green onions, sliced
  • egg substitute to equal 4 eggs
  • 2 C buttermilk
  • Side dish:
  • Broccoli
  • 8 ounces slice carrots
  • butter
  • salt and pepper

Preparation

Step 1

Preheat oven to 325 F. Spray a 9" casserole dish. Tear tortillas into bite sized pieces. Arrange half of tortillas in casserole dish. Top with half of chiles, half of cheese, half of pepper and green onions. Repeat layering. Set aside. In a bowl whisk together egg and buttermilk. Pour over tortilla mixture. Bake uncovered for 30 minutes, or until knife inserted in middle comes out clean.

Steam broccoli and carrots. Season.
