Ingredients
- 3 cups dried flageolets
- 1 l/2 teaspoons salt
- 1 onion, stuck with clove
- Bouquet garni
- Salt and pepper to taste
- 3 tablespoons sweet butter
- 2 tablespoons chopped fresh mint

Preparation
Step 1
Soak the beans m cold water tor "2 hours. Drain. Cover with fresh cold water. Add salt, onion and bouquet garni and bring to a boil. Reduce heat and simmer gently, covered, until done (2 to 3 hours). Drain. Remove onion and bouquet garni. Add salt and pepper to taste. Add butter and mint, and mix well.
