Ingredients
- 3 tablespoons butter
- 1/4 cup chopped green onion
- 3 tablespoon flour
- 1 cup hot milk
- 1/2 cup cream
- 1 Egg yolks
- 3/4 cup ham
- 1 1/2 cups cooked chicken
- 1/3 cup red bell pepper or pimento
- 3 tbs. dry sherry
- 1 tsp. lemon juice
- Pepper and salt

Step 1
Melt 3 tablespoons butter, add 1/4 cup chopped green onion and 3 tablespoon flour, cook 2 min. Add 1 cup hot milk and 1/2 cup cream, stir until thickened and remove from heat. Slowly stir the hot sauce into a beaten egg yolks. Dice and stir in 3/4 cup ham. 1 1/2 cups cooked chicken and 1/3 cup red bell pepper or pimento with 3 tbs. dry sherry and 1 tsp. lemon juice. Season with pepper and salt. Transfer to chafing dish and keep hot until served over rice.
