Bread - Gluten Free Bread Without White Starch

Ingredients
- 1 c water, heated to 110 - 115 degrees F
- 2 1/2 tsp instant yeast (SAF)
- 2 tbsp honey (or 2 tsp, if desired)
- 7/8 c blanched almond flour
- 7/8 c gluten-free oat flour (or sorghum flour, if oat intolerant)
- 1 c millet flour
- 1/4 c flaxseed meal (or chia seeds)
- 2 tsp xanthan gum
- 3/4 tsp salt
- 1/4 tsp gluten-free baking powder
- 2 large egg whites
- 2 large whole eggs
- 1/4 c neutral-flavored oil
- 3/4 tsp apple cider vinegar
- 2 tsp sesame, sunflower, or poppy seeds (or GF oatmeal)

Preheat oven to 170 degrees Fahrenheit or the lowest temperature possible.
Step 2
Oil a 9 x 5 or 9 x 4-inch loaf pan; and set it aside.
Step 3
Combine the water, honey and yeast; and set aside for about 5 minutes and until it becomes foamy on top.
Step 4
Whisk together the almond flour, oat flour, buckwheat flour, millet flour, flaxseed meal, xanthan gum, salt, and baking powder; and set aside.
Step 5
In the bowl of a high-powered mixer, beat egg whites until they become bubbly, about 20 - 30 seconds.
Step 6
Add yeast mixture, egg yolks, oil, and vinegar and beat on low speed for a few seconds or just long enough to combine.
Step 7
Sift the dry mixture into the wet mixture.
Step 8
Whatever almond flour and flax meal that do not sift through, add them to the bowl.
Step 9
Slowly working the speed of the mixer up to high, beat for 4 minutes.
Step 10
Transfer the dough to the loaf pan and distribute evenly using a silicone or rubber spatula.

Drop several drops of water on top of the dough and smooth out using a spatula. Add seeds to the top, if using, and lightly press into dough.)

Turn off the oven.

Place bread in the oven, close the door, and allow the dough to rise for about 40 minutes or until it is about 1/2-inch over the pan. (Do not allow the dough to crack. This is a sign of over rising and may cause the bread to fall upon baking or cooling.)
Step 14
Once the dough rises, remove the pan from the oven, and preheat the oven to 375 degrees Fahrenheit.
Step 15
Place the bread in the center of the oven on the center rack and bake for 40 minutes.
Step 16
If necessary, immediately loosen the bread from the sides of the pan.
Step 17
Immediately remove the loaf from the pan and transfer it to a wire rack to cool completely,

Slice the bread using an electric slicer, electric knife, or serrated knife.
Step 19
Freeze any unused portions and warm in the microwave on a low or "reheat" setting to defrost.
