Ingredients

  • 2 Cups Grated Cauliflower (washed, dried and grated using a food processor or cheese grater by hand until rice-like or thinner – Note – Approximately one head of cauliflower)
  • 1/4 Cup Egg Whites
  • 1 Cup 1% Cottage Cheese (drained)
  • 1 Tsp Oregano
  • 2 Tsp Parsley
  • 1/4 Tsp Garlic Powder
  • 1 Tbsp Coconut Oil (Optional)
  • 1-2 Tbsp Frank’s Hot Sauce (Optional)

Step 1

Makes 24 Cauliflower Pizza Bites

Directions:

Pre-heat your oven to 450 F.

In a hot frying stir fry the “cauliflower rice” until the cauliflower is slightly translucent (about 6-8 minutes). Place in a bowl and let cool.

Place all other ingredients the food processor and blend until smooth.

In a bowl combine both the “cauliflower rice” and blended ingredients. Mix completely.

Evenly spoon mixture into your muffin tin molds. Press pizza dough down evenly and firmly (*The pressing down firmly is very important to make sure these stick together).

Place in your oven and bake for 25-30 minutes.

Here are my main tips to make your pizza bites crusty:

Make sure your cauliflower is dry after washing.

1/2 of this recipe made ‘as-is’ with an organic, no-added-sugar dipping sauce can be enjoyed for meal 2, 4 or 6. You can also add this recipe to meals 3 and 5 (of course you need to add whatever else you need to make this a complete meal).

As soon as I realized I had all the ingredients needed for this recipe already in my kitchen…I was on it! They we’re so easy  to make and DELICIOUS! I made mine with a normal size muffin tin pan (my mini pan is packed away) and they still came out just as lovely. I’m excited to have a new & healthy mid-morning meal option. THANK YOU

These are a must make. I tried the cauliflower pizza crust and it didn’t work out too well, but I can see these on the table and devoured in minutes.

Problem is, I believe there is a typo.. I cooked these at 450 for 25 minutes and they were burnt to the pan.  I will try again at 350, These muffins are so tiny that at 450, the heat just killed them.

Hey Kathleen! Sorry that happened for you. It is not a typo your oven most run hotter than mine. I make these all the time and they always turn out perfect.  Try them in your oven at 425 or 350. Hope it turns out for you.

When I started making these, using my food processor to make the cauliflower rice, I had cauliflower all over the place, lol. But after the first bite, they were worth the mess! I think cooking cauliflower like this gives it such a beautiful sweet flavor. I loved them and will be making them again. Amy, thank you for a great recipe!

Where do u use the oil? To stir fry them? Otherwise can u use water?

I do not know what you mean. The recipe says “Place all other ingredients the food processor and blend until smooth” this includes the coconut oil.

Ok, so then how does the cauliflower cook? just stir fry it dry? I’m new to cooking. sorry!

The instructions says to use pizza dough but no ingredients or directions for where that comes from. So, I just made these without pizza dough and they are pretty tasty. I added 2 tsp of Parmesan cheese & 3 tsp of real bacon bits to the final mix, which added a bit more flavor. Yum!

I am really not sure. I make these all the time and they always come out perfect. Make sure you are following the recipe, ingredients and are baking them long enough.  Hope you can figure it out! They are really amazing!!!

This sounds amazing!! I love using cauliflower to replace grains. However, this recipe calls for cottage cheese which I HATE. Can I use an alternate ingredient?

You really can not taste the cottage cheese. But if you do not mind added fat you can always use real cheese as a sub.

I don’t like cauliflower or Cottage cheese and I loved these! I did add in some Parmesan and mozzarella cheese to be sure they appealed to my son. We dipped them in some marina sauces and loved them. I cannot believe he ate them – let alone me!

What do you stir fry the cauliflower rice with….anything?

Hey! I have done both! But this time I just used my cast-iron pan (it is none stick) and heated the “rice” until translucent.

um… the cauliflower mixture is the ‘dough’.  it’s gluten free- no actual pizza dough is used!

I made these with whole eggs and they turned out great! Other modifications I made were: not stir-frying the cauliflower before I mixed with with the liquids; using all 4 Tbsp of hot sauce (used Cholula and they turned out great); added a half tsp of salt; used a blender instead of a food processor (which worked but my blender was definitely worn out by the end); used a regular-sized muffin tin, but only filled each cup about a third of the way, and topped each one with grated mozzarella cheese. I didn’t think they needed a marinara, but a little more hot sauce to dip them in was perfect. Thank you for the recipe

I cooked these for dinner tonight and substituted a bit of cheddar, a bit of mozzarella and a bit of parmesan for the cottage cheese and added some diced chorizo too. Wow! So tasty and a great texture! The whole family loved them and these are now on our ‘tasty dinner list’.

Can you make these without a food processor? I was looking forward to making these for my boyfriend tonight and just realized that I do not have one

How do i make sure the cauliflower is dry? Just let it sit out for a while or  put in the oven?

What can you use in place of the cottage cheese if you’re dairy-free?

I want to make these so badly but I can’t eat dairy at all…is there ANYTHING to use as an alternative to the cottage cheese?

Made this last night and my whole family LOVED it! I fooled the kids-they had no idea they were eating cauliflower (: I did change it and doubled the recipe, then spread it out over a greased cookie sheet and baked for 30 min, then added our toppings and broiled. Perfectly delicious, easy and HEALTHY!

The pizza dough she is referring to is mixture made with the ingredients.  It’s not an extra ingredient, it’s the product that you just prepared.

The “pizza dough” referred to in step 6 is the cauliflower mixture that you made and put into the tin molds, not a separate ingredient

Can you freeze these? It’s just me and I’d love to make a enough to freeze and pop out when I want them!

Made these tonight, YUM! I used organic 0% yogurt as I am not able to have cottage cheese right now and they still turned out great.  I really miss my nighttime snacks so this seriously hit the spot.  Felt like I was cheating

i don’t like cottage cheese either but loved these. I did use a little less cottage cheese and added a little parmesan/mozzarella cheese. I had to be sure my son would eat them, hope to slowly phase out the cheese. But I think it also might have helped keep it all together.

I made them with ricotta that I had. I drained the ricotta, but they were a bit wet in the middle. What should consistency be in the middle? Could I make with shredded motzerella cheese?

Hey Nancy! They should be cooked all the way through. It sounds like there was too much moisture in your cheese. You can either try to lower the heat and back them for longer using the same cheese or use shredded cheese.

I made these last night for dinner and they were a HUGE hit with my family. My husband and I are doing low-carb right now, and have been missing the taste of pizza, so these were a great alternative. I added some mini pepperonis to the tops and used Italian seasoning instead of the oregano and parsley since it’s all I had. We didn’t have ANY leftovers, however it only took half a head of cauliflower to make a batch, so I have enough to make some more!

Made these for the 2nd time tonight and added the optional ingredients…no one liked the coconut oil flavor! Maybe I used the wrong kind, it was a solid coconut oil. So depressing after all that work! Hubby ate them anyway! LOL Trying again with no coconut oil and no hot sauce, adding some salt and pepper and garlic this time…also trying to make larger flat pizzas, like personal pizzas! Thanks, anytime I can get veggies into the kids I love it!

I added some low fat cheddar and they were delicious. Didn’t even need the sauce.
