Ingredients

  • 1 tbsp olive oil
  • 6 boneless, skinless chicken breast halves (about 2 lb.)
  • Salt and pepper
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 2 medium tomatoes, seeded and chopped
  • (about 1 1/2 cups)
  • 1/2 tsp red pepper flakes
  • 1/2 cup chicken broth
  • Green chilies, cut into strips, for garnish

Step 1

Heat oil in large nonstick saute pan over medium heat, Season both sides of chicken with salt and pepper. Place
chicken in pan and cook until brown, about 6 minutes per side, Remove chicken and set aside. Add onion and
garlic to pan, Cook over medium heat until lightly browned, about 3 minutes.
Add cumin and coriander and cook another 30 seconds, or until fragrant. Add tomatoes, red pepper flakes and chicken broth. Bring to boil. Return chicken to
pan along with any accumulated juices. Reduce heat; cover and simmer 15 minutes,
or until chicken is cooked through. Garnish.
