Ingredients
- 1 tsp. oil
- 4 small (2 medium) tomatoes chopped
- 1/2 green bell pepper chopped
- 1 tsp. minced garlic
- dash salt
- dash pepper
- 1 tsp. cumin
- 1 cup white rice (not instant)
- 2 cans (28 oz.) chicken broth
- 1 tbsp. cilantro

Preparation
Step 1
Saute tomatoes, bell pepper, garlic, cumin, salt and pepper in oil.
Add rice and saute with veggies.
Add chicken broth and cilantro. Cover and simmer for 40 minutes.
