Ingredients
- 2 cups shredded, peeled potatoes (about 1 pound)
- 1 1/2 cups (6 oz) shredded cheddar cheese, divided
- 1/2 tsp salt (divided)
- 4 eggs
- 1/2 cup milk
- 1 cup chopped fully cooked ham
- 1/2 cup chopped onion
- 1/2 tsp pepper

Preparation
Step 1
Combine potatoes, ½ cup cheese and ¼ tsp salt. Press into the bottom and up the sides of a deep greased 9” pie pan.
In a bowl, beat eggs and milk. Add onion, pepper and remaining salt and cheese.
Put ham on the potatoes and pour egg and milk mixture over it. Dish will be very full.
Bake at 350 degrees for 45 – 50 minutes. Let stand 5 minutes before cutting.
Can be served with a salsa.
