Ingredients
- 1/2 cup mushrooms, sliced
- 1/3 cup green onions, sliced
- 2 Tbsps butter
- 6 egg whites
- 6 Tbsps cold water
- 2 cups Jarlsberg lite, shredded
- 1/2 cup cooked low fat ham, diced
- Salt and pepper to taste

Preparation
Step 1
In large skillet, sauté mushrooms and green onions in the butter until onions are soft. Remove from pan and set aside.
In bowl, beat egg whites, water and salt.
In skillet, melt 1 tablespoon butter. Pour egg whites into skillet. Cook until beginning to set, lift to allow uncooked eggs to run under.
Add mushrooms, green onions, 1 ½ cups shredded Jarlsberg Lite cheese and ham.
Cover and cook one to two minutes until cheese is melted. Served folded over, garnish with ½ cup Jarlsberg Lite shredded cheese.
