Ingredients

  • Crust:
  • 4 (6 oz) skinless boneless chicen breasts
  • 3 tbs olive oil
  • 1/2 cup bread crumbs
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • salt and pepper
  • Sauce:
  • 1 (16 oz) can chopped tomatoes or stewed tomatoes
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 2 oz. pepperoni, sliced in thin rounds (8slices)
  • 1/2 cup shredded mozzarella cheese

Preparation

Step 1

Preheat oven to 350*

Pound the chicken until 1/2 inch thin. In a bowl combine the crust ingredients and coat the chicken thoroughly.

In a skillet on medium high, saute the chicken until lightly golden brown. Remove and place in casserole dish.

In a saucepan combine ingredients for the sauce and simmer for 10 minutes. Pour over the chicken. Place the slices of pepperoni on top of chicken and then sprinkle with mozzarella.

Bake 20 to 30 minutes.
