Ingredients
- Frosting:
- Cake
- Wax paper
- 1 orange
- 2 cups flour
- 2 cups sugar
- 2 tsp b powder
- 2 tsp b soda
- 2 tsp cinnamon
- 2 tsp nutmeg
- 1 tsp salt
- 1 1/4 cup oil
- 4 eggs
- 2 cups grated carrot - cheese style grater on large cut
- 1/2 cup chopped nuts
- 1 8-oz cream cheese
- 1/4 cup margarine
- 1 lb. powdered sugar
- 1 tbsp orange puree

Step 1
Cake:
Trim both ends off of orange (wash well). Cut in wedges, then chunks. Remove center white core and seeds. Puree in blender (yes, including peel) Reserve 1 tbsp puree for use in frosting.
Sift together flour, sugar, b powder, b soda, cinnamon, nutmeg, and salt. Add oil and orange puree mixing well. Add eggs and combine thoroughly. Stir in carros and nuts.
Line two 9" cake pans with wax paper. Pur batter into pans and bake 350 for 1 hour or until cake tester comes out clean.
Cool 10-15 minutes; remove from pan and cool completely before frosting.
Frostiing:
Beat cream cheese and butter until blended; add sugar and orange puree; combine well.
