Cream of Lima Bean Soup

Ingredients
- 2 T Butter
- 1 package frozen Lima Beans
- 1/3 cup sliced scallions
- 1/4 t salt
- 1/8 t freshly ground pepper
- 1/2 t dried marjoram
- 4 sprigs fresh parsley, chopped
- 1/2 cup of cream
- 14 ounces chicken stock
- Chopped chive and parsley for garnish

Preparation
Step 1
1. Melt butter in a saucepan. Add lima beans and scallions and cook until the beans are tender.
2. Add salt, pepper, marjoram and parsley. Blend the mixture with a hand or standup blender for 20 seconds. Then gradually add cream while blending.
3. Add chicken broth and mixture to the saucepan. Simmer or chill and serve very cold. Garnish with chopped chive or parsley.
