Chicken-Parmesan Meatball Casserole 1 Picture

Ingredients

  • 1 lb lean (at least 80%) ground chicken
  • 1 cup Progresso™ Italian style bread crumbs
  • 1/2 cup Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup uncooked penne pasta
  • 1 jar marinara sauce
  • 2 cups shredded mozzarella cheese (8 oz)

Preparation

Heat oven to 450°F. Line large shallow baking pan with foil.

In large bowl, mix chicken, bread crumbs, cooking sauce and Parmesan cheese with hands until well combined. Shape mixture into 1-inch balls; place in pan.

Bake 18 to 20 minutes or until no longer pink in center. Meanwhile, cook pasta as directed on box.

When meatballs are thoroughly cooked, remove from oven; reduce oven temperature to 350°F.

In another large bowl, gently combine cooked pasta, marinara sauce and meatballs. Spoon half of mixture into ungreased 13x9-inch (3-quart) glass baking dish. Top with half of the mozzarella cheese. Spoon remaining half of pasta mixture over cheese. Top with remaining cheese.

Bake 20 minutes or until cheese is melted.
