Ingredients

  • Boneless, skinless chicken thighs
  • 2 cans cream of chicken soup
  • 1 lrg can of ortega diced green chiles, fire roasted mild
  • monterey jack cheese, shredded
  • sour cream
  • Flour Tortillas

Preparation

Step 1

Preheat oven to 350 degrees. Boil chicken. Take chicken out of pot and shred. Put chicken soups and 1/2 can of ortega chile into a bowl. Dip tortillas into pot of chicken stock (from boiled chicken). Add to 13×9 pan adding chicken mixture and wrapping tortilla like a burrito. Add remainder of ortega chiles to top of tortillas. Top with shredded cheese. Drizzle more chicken stock on top of cheese so enchiladas don't get dry. Bake in oven for 30-40 minutes. Serve with sour cream on side.
