Preparation
Step 1
Preheat oven to 200 degrees.
Steak: Combine 1 1/2 cup flour, and 1/4 tsp pepper in a small bowl. Sprinkle 1 side of meat with the house seasoning and the other side with the seasoning salt. Then, dredge the meat in buttermilk and then flour. Heat 1/2 cup oil in heavy skillet over medium-high heat. Add 2-4 of the steaks to the hot oil and fry until browned, about 5-6 minutes per side. Remove each steak to a rack to drain. Put in oven to keep warm. Repeat with remaining steaks, adding up to 1/4 cup more oil, as needed.
Gravy: Make gravy by adding 2 tbsp flour to the pan drippings, scraping the bottom with a wooden spoon. Stir in the remaining 1/4 tsp pepper and salt. Reduce heat to medium and cook, stirring frequently, until flour is medium brown and mixture is bubbly. Slowly add the whole milk, stirring constantly until reaches gravy consistency. Plate steaks and pour gravy on top.
