Ingredients
- 5 tablespoons fresh squeezed lime juice
- 3 tablespoons mezcal
- 2 tablespoons olive oil
- 1/8 cup minced cilantro
- sprinkle of salt
- sprinkle of pepper
- 1 pound fresh pacific halibut

Preparation
Step 1
In a small jar with a lid, combine everything except the halibut. Place the halibut into a shallow glass bowl, and drizzle the marinade over the top. Let sit for 60 minutes, turning the fish over after 30 minutes.
Preheat a pan grill or a BBQ grill until hot. Lightly olive the grates with a pastry brush that has been dipped into some olive oil. Lay the fish onto the hot pan or grill. Lightly cook for 4 minutes, then flip over, and cook another 4 - 6 minutes or until the fish is cooked through but not overcooked (tough).
Serve. Eat.
