Ingredients

  • CLASSIC:
  • e1 dozen eggs
  • 3 to 4 3 to 4 4 tbsp mayonnaise
  • 2 2 2 tbsp grated onion
  • 2 2 2 tbsp picle relish
  • 1 1 1 clovee garlic, grated
  • 1 1 1 tbsp yellow r dijon mustard
  • 2 2 to 1 to 1 tbsp hot sauce
  • 1 1 1 tsp worcestershire sauce
  • 1 1 1 tsp sweet paprika
  • Salt and pepper
  • Thinly sliced red chile, such as fresno for garnishing
  • ASIAN:
  • 1 2 to 3 2 mayo, garlic, hot sauce, salt and pepper. Add finely grated fresh ginger (about 1 inch), 2 to 3 finely chopped scallions and 2 tbsp tamari. Garnish with chopped or whole cilantro leaves.
  • CAESAR:
  • 2 the filling with the mayo, garlic, worcestershire and black pepper. Add a handful of grate parmigiano reggiano, the juice of half a lemon and 2 tsp anchovy paste. Garnish with finely chopped romaine lettuce leaves from the heart.
  • GREEN OLIVE:
  • 1/2 making the filling, omit the pickle relish, garlic, worcestershire and sweet paprika. Add 1/2 cup finely chopped well-drained green olives with pimientos. Omit the sliced chile and garnish with the sweet paprika.
  • STEAKHOUSE:
  • 3 1 the filling, omit the relish, garlic and worcestershire; add 3 tbsp finely chopped parsley and 1 tbsp each horseradish and steak sauce. Omit the chile and garnish with thinly sliced flank steak and diced tomato.
  • GRAVLAX:
  • 1/2 3 1 with the mutard, hot sauce and worcestershire. Add 1/2 cup diced smoked salmon, 3 tbsp each creme fraiche and minced red onion, and 1 tbsp each minced capers and lemon zest. Garnish with fresh dill and black pepper.
  • PIMENTO CHEESE:
  • 2 1/2 1/4 1 1 a 2 tbsp room-temperature cream cheese and 1/2 cup grated sharp yellow cheddar. Fold in 1/4 cup chopped pimiento peppers. Garnish with 1 tbsp finely sliced jalapeno and 1 tsp cayenne.
  • NICOISE:
  • LOBSTER & CAVIAR:
  • 2 2 1 3/4 the mayo, onion and mustard. Add 2 tbsp lemon juice, 2 tsp sour cream and 1 tsp chopped chives. Fold in 3/4 cup finely chopped cooked lobster tail meat or lump crabmeat, Garnish with chopped fresh chives and black sturgeon caviar.
  • HUEVOS RANCHEROS:
  • 1 1 1 1/2 the mayom onion and mustard. Add 1 tbsp finely chopped jalapeno, 1 tbsp black bean puree, 1 tbsp finely chopped sun-dried tomatoes in ooilm and 1/2 tsp each ground cumin, cayenne and chopped chives. Garnish with chopped cilantro.
