Ingredients

  • 250 g very soft butter (not melted)
  • 3/4 cup castor sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 2 1/2 cups plain flour
  • 2 1/2 tspns baking powder
  • 400g can watties simply apple
  • 1 grated rind of orange or lemon
  • icing sugar to serve

Preparation

Step 1

In a bowl or food processor beat together the butter, castor sugar, egg orange rind or lemon rind, vanilla essence until creamy and well mixed.

Add the flour and baking powder and stir or pulse to mix well.

Spread 2/3rd into the baseof a well greased and floured 23 cm cake tin.

Spred over the apple and with floured hands dot the remaining dough over the top.

Bake at 190 degrees celcius for 40 minutes.

When cooled dust with icing sugar and serve into wedges
