Ingredients

  • 3 lb chicken, boneless, skinless
  • 1 green bell pepper
  • 1 cup ketchup
  • 2 tbsp vinegar
  • 2 tbsp soy sauce
  • 1 tsp ground ginger
  • 1/4 cup butter
  • 3 carrots, sliced
  • 1 large can pineapple chunks
  • 1/2 cup brown sugar
  • 1 tbsp garlic powder
  • Jasmine or long grain white rice for side dish. Use my "Perfectly Cooked White
  • Rice" recipe

Preparation

Step 1

Preheat oven to 350 degrees. In skillet, saute onion, green pepper and carrots for about 5 minutes. Stir in remaining ingredients. Cook, stirring until mixture boils. Arrange chicken in baking pan. Pour sauce mixture over chicken. Bake covered for 45 minutes, uncover and cook an additional 30 minutes.

Start cooking rice during last 30 minutes of baking chicken.
