Ingredients

  • Dry:
  • 4 cups flour
  • 1 tsp. baking powder
  • 2 cups sugar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • Wet:
  • 2 eggs slightly beaten
  • 4 Tbsp. melted shortening
  • 4 Tbsp. hot water
  • 1 cup orange juice
  • 1/2 cup nut meats
  • 1 cup raw cranberries, chopped

Preparation

Step 1

Sift together dry ingredients. To the dry ingredients add the eggs and mix. Melt shortening into the water, and then mix into the flour mixture. Finally, add the orange juice, nuts, and cranberries. Grease 2 loaf pans and put batter in. Bake for one hour and 10 minutes in a 350 degree F oven. Butter top crust, wrap in wax paper, and cool 3 hours. Rewrap and store. This freezes well.
