Ingredients
- 1 cup milk
- 1/2 cup sugar
- 2 tsp. salt
- 1/4 cup fat (crisco?)
- 2 packs of quick-acting yeast
- 1/2 cup lukewarm water
- 5 cups enriched flour (about)
- 2 eggs
- 1 tsp. grated lemon or orange rind
- 1 pinch mace

Scald milk or use dry milk and warm water. Put sugar, salt, and fat into mixing bowl, pour hot liquid over them, stire well and let cool to lukewarm.
Soften yeast in lukewarm water and add to other ingredients.
Add about 2 cups of flour to mixture and mix well.
Add eggs and lemon or orange rind. Beat mixture well.
Add enough additional flour to make a dough that is soft but stuff enough to handle on a board.
Turn out on a lightly floured surface and knead until dough is smooth, elastic, and does not stick to board or hands. Form into a ball, place in a greased bowl, grease top, and cover and let rise in a warm place until doubled (about 1 1/2 hours).
When light, push down, Let stand 10 minutes.
Shape into rolls, tea rings, or coffee cakes. Let rise until doubled in bulk (about one hour). Bake in moderate oven (350 degrees F) for 30 minutes for coffee cake, 25 minutes for pan rolls, and 20 minutes for individual rolls.
