Macadamia Nut Crusted Mahi Mahi

Ingredients
- 4 # mahi Mahi
- 1 cup flour
- 2 t salt
- 1 t black pepper
- 8 ounces toasted Macadamia nuts(chopped)
- 2 cups panko crumbs
- 4 eggs
- 2 T water
- 1 cups veg oil
- Passion Rum glaze
- 1.5 cup dark rum
- 1 can passion juice
- 1/2 cup sugar
- 2 shallots minced
- allspice to taste
- ground cloves
- grated fresh ginger

Preparation
Step 1
toast macadamia nuts
blend nuts with 2 cups of the panko crumbs
beat the eggs to for a wash
portion fish into 5 ounce pieces(about)
dredge fish into seasoned flour and then into egg wash and directly into the nut/panko mixture.
Place on a paper lined sheet tray and refrigerate for 30 minutes or longer
heat 1/2 cup of oil in a large sautoire pan to 360 degrees
place breaded fish into hot oil and fry until golden brown on both sides, turn them only once in the pan
remove from oil and place on sheet tray and finish cooking in a 300 dgree oven for about 5-8 minutes
SAUCE
heat shallots and run in a sauce pan and ignite. continue moving pan occasionally until all fire is extinguished. Add fruit juice and season with allspice , pinch of clove and grated fresh ginger. reduce to napier consistency
spoon sauce over fish and serve
