Ingredients

  • 1 tsp red wine vinegar
  • 1 tbsp soy sauce
  • 1 tbsp ketchup
  • 2 tbsp orange juice
  • 1 tsp honey
  • 1 tsp cornstarch
  • 1 tbsp oil
  • 3 1/2 chicken, boneless, skinless, cut into strips
  • 2 scallions, finely chopped
  • 2 oz baby corn, halved
  • 1 carrot, cut into thin sticks
  • 1/2 red bell pepper, seeded and chopped
  • 1/2 zucchini, chopped
  • 1 3/4 oz bean thread noodles
  • 2 tsp sesame seeds
  • Teriyaki sauce, optional
  • Hoisin sauce, optional

Preparation

Step 1

Prepare noodles. Mix vinegar, soy sauce, ketchup, orange juice and honey together. Add cornstarch and stir until well combined.

Heat oil in skillet and stir fry chicken strips for 3-4 minutes. Add vegetables and stir fry for 4-5 minutes.

Add cornstarch mixture and bring to boil, stirring constantly. Reduce heat and let simmer for 1 minute until thickened.

Meanwhile, prepare noodles to package directions. Drain and add to skillet along with the sesame seeds. Mix well. Serve hot or cold. With or without teriyaki sauce or hoisin sauce.
