Ingredients

  • 1/2 cup diced salt pork
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 3 T chopped green pepper
  • 1 cup raw diced potatoes, peeled
  • 2 cups of water
  • 2 t salt
  • 1/8 t paprika
  • 1/2 bay leaf
  • 1/2 t thyme
  • 3 cups fresh cut corn
  • 3 T flour
  • 1/2 cup milk
  • 1 1/2 cups milk, hot
  • Chopped parsley (optional)

Preparation

Step 1

1. Sauté the salt pork slowly in a saucepan until lightly browned. Add the onion, celery and green pepper, cook until golden brown.

2. Add the potatoes, water, salt, pepper, paprika, bay leaf and thyme. Cover and simmer until potatoes are tender, 5-7 minutes.

3. Add corn kernels to the pan and simmer until corn is tender, 3-4 minutes.

4. Blend the flour with the cold milk. Add some of the hot vegetables to the mixture then add to the pan.

5. Add the hot milk and reheat the soup, but do not boil. Serve hot with a sprinkle of parsley if desired.
