Once you turn it off, a slow cooker will still keep food warm for an hour or more, so plan for a 3-hour cooking time, but check the rice at the 2-hour mark (ours was done TO PERFECTION in exactly 2 hours). Two cups of rice will yield about 7 cups of uncooked rice. Brown rice is an excellent source of fiber and heart-healthy things like manganese, magnesium, and selenium. Ingredients

  • 2 cups brown rice
  • 2 cups chicken* broth (look for low sodium)
  • 2 cups water
  • 1 Tablespoon olive oil
  • Kosher salt to taste (or any salt you have on hand)

Preparation

Step 1

-Grease crock-pot/slow cooker lightly with olive oil or spray.

-Add all ingredients above. Stir.

-Cover and cook on High for 2-3 hours.

Serves: 6-8
Prep time: 5 minutes

Notes: any broth will do — beef, seafood, vegetable, or you may use all water.

Brown rice can be served alone, or mixed with many dishes from meats to veggies to soups.
