Ingredients
- Tzatziki
- Mt Bread/Pita bread/flatbread
- Shredded cos lettuce
- Fresh tomato
- Roast lamb or Kofta
- Tzatziki
- 1.5 kg cucumber grated
- 2 tbsp salt + 100 g salt
- 2.5 kg natural yoghurt
- 2 cloves garlic finely minced
- Kofta lamb
- Lamb, diced
- A pinch, coriander powder
- 1 tsp cumin
- lemon zest
- 1 chilli, chopped
- pepper to taste
- 1/2 cup of fresh herbs: parsley, thyme, coriander and mint
- 2 garlic cloves, minced
- Sumac

Step 1
Tzatziki
Mix together cucumber salad and 2 tbsp salt. Leave overnight on covered tray.
Mix together yoghurt and salt and hang in cloth overnight. Drain excess liquid from the cucumber. Add yoghurt and garlic. Season if needed. No pepper.
Kofta
Mix all ingredients together. Cover & refrigerate. Roll ingredients into cylinders and fry until brown. Remove from pan and roll up in flatbread with tomato, lettuce and tzatziki.
