Ingredients

  • Sauce:
  • 1/3 cup olive oil
  • 1 1/2 cup finely chopped onion
  • 1 clove garlic crushed
  • 1 (2lb.3oz.) Italian peeled tomatoes, undrained
  • 1-6oz. can tomato paste
  • 2 Tbsp. chopped parsley
  • 1 Tbsp. salt
  • 1 Tbsp. sugar
  • 1 1/2 cups water
  • 1 teasp. oregano
  • 1 teasp. basil
  • 1/4 teasp. pepper
  • Makes 18 2-13x9x2" pyres baking dishes
  • Batter:
  • 6 eggs
  • 1 1/2 cups flour
  • 1/4 teasp. salt
  • 1 1/2 cups water
  • Combine and let stand 1/2 hr. then fry 3 Tbsp. batter in 8" skillet

Step 1

Filling: 1/4 cup filling for each manicotti

2 lbs. ricotta cheese
1- 8oz. mozzarella cheese, grated
1/3 cup grated parmesan
2 beaten eggs
1 teasp salt
1/4 teasp. pepper
1 Tbsp. chopped parsley
1/4 cup grated parmesan (to sprinkle)

Bake 350 degrees for 1/2 hr.
