Ingredients
- 6 tablespoons of butter or margarine
- 1 pound of boneless, skinless chicken breast, cut into thin strips
- 1- 3 cloves garlic minced
- 1 and 1/2 cup uncooked rice
- 1/2 pound mushrooms, sliced
- 3 green onions chopped- including tops
- 3 cups chicken broth
- 1 teaspoon basil
- 1 cup shredded cheddar cheese

Step 1
In a large skillet melt 2 tablespoons of butter. Add chicken and cook over medium heat, stirring constantly until pieces are browned, about 5 minutes. Remove chiken from skillet. Add remaing butter, rice and garlic to the skillet and cook, for about 5 minutes. Add the mushrooms and green onions. Continue cooking stirring occasionally, until mushrooms are tender, about 2 minutes. Stir in chicken broth and basil. Bring the mixture to a boil, cover and simmer 15 minutes. Gently stir in the chicken. Continue simmering until the chicken is heated through and the rice is tender, about 5 minutes. Top with cheese and serve immediately.
