Ingredients
- 3 tablespoons butter
- 8 fluid ounces heavy whipping cream
- salt to taste
- a pinch of nutmeg
- 1/4 cup Parmesan cheese
- 1/4 cup Romano cheese
- 1 egg yolk

Preparation
Step 1
1. Melt butter over medium heat.
2. Add cream to melted butter, stirring constantly.
3. Stir in salt, nutmeg, Parmesan cheese, and Romano cheese. Continue to stir constantly.
4. Stir until all cheese has melted and add egg yolk. Stir quickly to avoid the egg yolk cooking into solids.
5. Simmer over medium-low heat for 3-5 minutes.
