Ingredients
- 1 small onion, chopped
- 1/2 red bell pepper, diced
- 2 large red potatoes, chopped
- 3 tbsp butter
- 3 tbsp flour
- 1 (14 ounce) can corn
- 3 cups milk
- salt & pepper

Step 1
Put onion, bell pepper, potato, and butter in large saucepan and cook over medium heat, stirring occasionally for 10 minutes. Stir in flour and cook 1-2 minutes or until bubbly. Add corn and liquid from can and stir until liquid is completely mixed into the flour. Add 1 cup milk and stir until smooth. Add remaining 2 cups of milk and cook. Stirring occasionally for 10-15 minutes or until it just begins to boil. Season to taste with salt and pepper. Decrease heat to low and cook for 10 more minutes. Serve.
