Soft Molasses Cookies
- 1 cup melted lard
- 1 cup molasses
- 1 cup brown sugar
- 2 tsp baking soda dissolved in 1 cup boiling water
- 1/4 cup all purpose flour
- 2 tsp cinnamon
- 1 tsp cloves
- 3 tsp ginger
- 1 tsp salt
- 4 cups flour
Mix molasses while lard is warm.
Add brown sugar, baking soda and water
When cool enough, add 1/4 cup flour, cinnamon, cloves, ginger and salt.
Mix well and stir in 4 cups flour.
Dough will be very soft. Cover or wrap in saran.
Chill over night in fridge or 2 hrs in deep freeze.
Using enough flour to keep from sticking roll to 1/4 inch thick and cut out with 3 inch cookie cutter.
Bake 375 for 6-7 minutes.
