Ingredients

  • 2 large bunches collard greens
  • 1 pound smoked meat (ham hocks, turkey wings)
  • 3 tbsp olive oil
  • 1 onion sliced
  • 2 garlic cloves
  • 2 bay leaves
  • 2 quarts chicken broth, warm & 1 quart warm water
  • 2 tbsp hot sauce
  • 2 tbsp butter

Preparation

Step 1

Wash greens thoroughly. Remove stems that tun down the center. Stack 6 to 8 leaves on top of one another, roll up, and slice into 1-inch thick slices.
Place large pot over medium heat and add the olive oil. Add onion, garlic, bay leaves and meat. Cook til onions are soft, about 10 minutes. Pack in greens, pushing them down into the pot. Add broth and water and hot sauce. Bring to a boil, turning greens as they wilt. Add butter. Lower to a simmer, cover the pot and cook 45 to 60 minutes. Check seasoning; add salt and pepper. Remove bay leaves and serve.
